After baking these spooky spider cookies for the Monsoon blog a few weekends ago, I realised I hadn’t baked for Make, Do & Push! for AGES. So here is a monstrous recipe! The cupcake and icing base can be adapted all year round for any theme.
H-Bear and I baked these yesterday, on a soggy autumnal morning, to get us in the mood for Halloween and to celebrate half term starting today (yay!). Cake is always required for a celebration – and it will be lovely to have Busby home with us for a week!
And, of course, the recipe is dairy free (df) and soya free (sf) so H-Bear can join in with the munching too! As with all of my df and sf recipes – milk products can be substituted in the place of the non-milk products I use.
Dairy and Soya Free Monster Cupcakes (makes approximately 12-14)
Ingredients (Cupcakes)
150g plain flour
140g caster sugar
1.5 tsp baking powder
40g of butter alternative (we use Flora Freedom) – at room temperature
120ml oat or coconut milk
1 egg
A few drops of vanilla extract
A pinch of salt
The Method
1. Preheat oven to 170°c (fan oven) 190°c (non fan).
2. Mix the flour, sugar, baking powder, salt and butter alternative together until everything is combined. It should be a sandy consistency.
3. Gradually pour in half the oat/coconut milk and mix until it is incorporated.
4. Whisk the egg, vanilla extract and the rest of the oat/coconut milk together.
5. Pour the egg mixture into the flour mixture. Mix until fully incorporated.
6. Spoon into cupcake cases.
7. Bake for 20 minutes, or until golden brown.
8. Turn out onto cooling rack.
Ingredients (Frosting)
150g sifted icing sugar
40g butter alternative
15ml oat or coconut milk
A few drops of vanilla extract
Food colouring gel to colour
Mini marshmallows for eyes (with black gel colouring for pupils)
Strawberry laces for smiles
The Method
1. Whisk the icing sugar and butter together until combined.
2. Combine the oat/coconut milk and vanilla together in a separate bowl and gradually whisk into the sugar mixture.
3. Add the food colouring until you achieve the desired colour.
4. Continue whisking until light and fluffy.
5. Decorate as you wish.
